Figs  From Asia Minor and Smyma. Of Biblical times.

Figs are amber tinted, greenish-yellow, or black purple, and are ripe when soft to the touch. Stuff fresh figs and serve as a confection, dessert or sweet. They do not need to be peeled. Figs are also available preserved, dried and canned in syrup. They are used as a confection, for desserts, in cakes and cookies and breads. 

The fig tree exudes a white latex, which is used in the Middle East to curdle milk for cheeses and yogurt-making.  Fresh figs marry extremely well with the white salty cheeses of the middle east, such as feta and halloumi.

About 12 figs weigh 1 pound.

Storage User figs with in 2 days. Store them in a refrigerator in a single layer on a paper towel. on a tray.  Store dried figs in an airtight container for up to 6 months.
