Fresh
figs
are
highly
perishable
and
must
be
ripe
to
be
of
good
quality.
A
ripe
fig
is
soft
and
varies
in
color
from
greenish
yellow
to
purplish
or
almost
black
depending
on
the
variety.
When
over
ripe,
the
fig
has
a
sour
odor
which
comes
from
the
fermentation
of
the
juice.
If
bruised
the
fig
will
break
down
rapidly
and
should
be
avoided.Fresh Figs are best used right away but can
be refrigerated for up to three days.
