Olives
From Biblical times. Olives vary greatly in size ranging from 128 to
140 per pound, for small olives to as few as 30 to 32 per pound for super
colossal sizes. Olives are available tree ripened, or green, ripe or
black, pitted, pitted and stuffed with onions, garlic, capers, etc., or
Spanish style,
with
pimientos.
Olives
are used in cooking, in sauces, for garnishes and as snacks. Olive oil is
an important oil (see Fats and Oils). The unattractive film that forms in
opened bottles of olives is harmless and can be scraped off. Store opened
bottles in the refrigerator.
