Desirable

Firm, heavy in relation to size, with a uniform, dark rich purple color, and free from scars and cuts.

Undesirable
Wilted, shriveled, soft, or flabby eggplant will usually be bitter or otherwise poor in flavor.

Decay appears as dark brown spots on the surface and may progress rapidly.

Choose eggplant that are 3 to 6 inches in diameter

Grades

U.S. No. 1 consists of eggplant of similar variatal characteristics which are fairly well colored, firm, clean fairly well shaped and are free of decay and worm holes.
