Processed   Pepper sauces made with Tabasco peppers are prevalent, pickled whole may also be found.

Fiery hot, this is the one that has made Tabasco sauce famous. Developed by the McLhenny Company of Avery Island, Louisiana, the cultivar was named after their fermented pepper sauce.  The pepper seeds are protected by the company and only growers selected by the company receive the seeds for production.
