Other Names  Congo, bonda man Jaques, bonnie, ginnie, Guinea Pepper, pimento do cheiro (in Brazil)    

Flavor  Very Hot. 10+ - 285,000 Scoville Units 

Shape  Round to oblong, undulating, pointed apex, 1 inch to 1-1/2 inch long, habanero type  

Color   Green to yellow-orange, or orange, or orange-red 

Fresh   In markets on the east coast especially those areas that have a large Caribbean population

Dried   When dries it looses the flavor but not the heat.

Processed   Bottled sauces, canned  

A blistering hot pepper 40 times hotter than Jalapeno!  Some people think the habanero and the West Indian Scotch bonnet, but they are not the same cultivars, though they are the same species. The habanero is lantern shaped and the Scotch bonnet has no neck and is regularly inverted at the apex when mature, giving it the form of a Scotsman's headpiece.  Handle with care!
