Warsaw Grouper (Epinephelus nigritus)

A very large grouper that can reach weights up to 300 pounds. The Warsaw Grouper is a deep water species of in waters of at least 200 feet making harvesting difficult. The process for catching is usually one line one fish on electric reels.

The meat is extremely firm, white and sweet with a skin as tough as a jewfish making processing challenging. 

The unique flavor is attributed to its diet of crustaceans especially crab.
