Jewfish (Epinephelus itajara) Guasa, Giant Sea Bass

This grouper is the largest of all groupers reaching a weight of about 700 pounds, this grouper is found along the coast of Florida, the Gulf of Mexico, and along the South American Coast to Brazil.  A similar but smaller species is found in the Mediterranean, the Canary Islands and along the West Coast of Africa.

Even though these fish attain such great size they are found in shallow waters in estuaries, under bridges and around reefs.

Beside the size a Jewfish is identified by its Grayish-brown in color with dark brown spots on the head, body and fins.  Young Jewfish may have dark brown bars on their sides. 

The meat is sweet, firm and white with a large to medium flake and very tough skin which makes them difficult to process.

Moist cooking methods are often recommended.
