Spotted Cabrilla (Epinephelus Analogus)

A pacific species common along the coast of Mexico to Panama it reaches a weight of 50 pounds.  The demand is so great in Mexico that this fish is not often seen in U.S. markets.

Of the Pacific grouper family this fish has the best flavor and texture often compared to the Nassau Grouper.

Its markings are a brownish base color with darker cross bars on its sides and covered with reddish-brown spots.
