Rye Sprouts have similar taste and characteristics as wheat and barley sprouts, they are ready to eat when the sprout achieve the same length as the seed at about 3 to 5 days.  At seed length the sprouts are good for use in bread, cereals and main dishes.  If you are planning to use the sprouts in a salad let them grow to 1 to 1 1/2 inches and allow  a few hours of sunlight to develop the chlorophyll.
