Cabbage Family Sprouts - Broccoli, Brussel
Sprouts, Cabbage, Cauliflower, Collards and Kale
The cabbage family produces sprouts with a wide array of
flavors.  For this reason each variety must be tasted to make sure
that they fit the application properly.   Optimum sprouting time
is 3 to 5 days and reaching an optimum length of 1/2 to 1 inch.
It is important that these sprouts are not allowed to
grow too long as they become strong flavored and bitter.  Use young
spouts in soups, salads and main dishes.
