      There are many varieties of peas most of which can be sprouted.  The 
      smaller the sprout the more tender it will be, so the peas should be used 
      3 to 4 days  after sprouting and at a length equal to the length of 
      the seed.  
      Peas sprouts are good when used as soup garnishes, in
