As a grain used for centuries throughout Russia, Manchuria and Europe in bread making it is now one of the fastest growing of all cereal grain crops.  Most of the American crop is used for pancake flours and livestock feed it is easily produced due to its resistance to disease and blight.  

Buckwheat sprouts are optimum at 2 to 4 days and the spout should be no longer than the grain itself, 1/4 to 1/2 inch, but the sprouts are often used to a length of 3/4 to 1 inch.  Buckwheat sprouts can be substituted in recipes calling for barley, millet, oat, rice or wheat sprouts in breads, cereals main dishes and soups.
