Yellowtail Snapper (Ocyurus chrysurus)

Found from Florida to Brazil this shallow water snapper seldom weighs more than five pounds and has an average market size of 1.5 pounds. 

This snapper looses considerable flavor the longer it is held even on ice, so the quicker and fresher the better.

It's yellow stripe that runs from its nose to tail makes it easily recognized. 

The Yellowtail has a finer texture than other snapper with white sweet flesh.
