 Rex Sole (Glyptocephalus zachirus)
A small extremely delicate and fine textured sole found off
the west coast from the Bering Sea to southern California. Too small and
thin to be filleted it is usually is cooked whole. Not plentiful
this is a somewhat expensive compared
