These fish are usually mild and delicate in flavor. Supplies of freshwater fish have dwindled in recent years due to pollution of the waters. The possibility of contamination from polluted waters is greater in freshwater fish. The toxins tend to collect in the skin and in a thin layer just below the skin of the fish. It is always best to skin and remove the fat from fish before cooking.

*NOTE: In general, the more oily parts of a fish should be avoided unless it is a deep water fish.
