Similar to the Winter Flounder, it is taken in large quantities from the Georges Banks. Some say the lemon sole is a winter sole that is over 2 pounds.  But experts say the lemon sole has a yellowish cast and distinctive differences in the dorsal and anal fins.

A flat fish with a plump body, the taste of the Lemon Sole is mild and sweet. the flesh is fine textured and fragile.

Lemon Sole are found along the Atlantic Coast off North America from Labrador to Georgia, with the largest part of the catch coming from Long Island, Block Island, and the Georges Banks east of Massachusetts.

The term sole is used for many species that are not real sole because of the higher perceived value than flounder. The food and Drug Administration which regulates the names of seafood products allows many species that aren't true members of the Soleidae family to be called soles for marketing purposes.  The Lemon sole is one of these as it is a flatfish flounder.

Quality  Some flatfish like flounder and sole are brined in a solution of tripolyphosphates.  This gives the meat a an opaque white look and the meat becomes limp and flabby.  This process, approved by the US Department of Commerce significantly damages the taste and texture of the flounder.  Make sure to enquire prior to purchase if this processed has been used on the fillets you purchase.

Nematodes also called round worms are sometimes found in flounders and must be inspected for using a technique known as candling,  The nematodes possess no heath risk but rather an esthetic problem for the diner.
