Barley
Flour is produced from barley after malting and removal of sugar and
starch by hot water extraction. The extracted barley is dried by indirect
steam, milled and sifted to obtain the flour. Barley
flour is mild-flavored flour and contains some gluten.
Barley flour is an ingredient in many frying batters
because it develops a crispy shell when fried.
