Sweeteners are used in savory dishes to bring balance to the ingredients and flavors used. The interaction of brown sugar in barbecue sauce with the acid of the vinegar and tomatoes is a great example.  In desert dishes sweeteners balance acidic fruits and ingredients.  Honey and maple syrup are used for glazes and sauces to add, balance, enhance or bring out flavors in meats, fruits, and deserts. The experienced palate knows when and how much to add to get the results needed.
