Oils are separated in the the refined and unrefined categories. Refined Oils are processed to achieve clarity, longer shelf life and higher smoke point (the temperature the oil produces smoke when heated). Most refined oils have neutral flavors. Oils with high smoked points and bland flavor tend to be more stable when used in cooking. Unrefined Oils are cloudy or less clear than refined and have distinct, intense aromas and taste denoting the products the are pressed from.
