Fine textured skin and heavy for their size.  Those with thick skin, coarse texture and have less weight will have less juice.   Lemons that are shriveled or hard skinned, or which are very soft or spongy, are not desirable.  Soft high colored fruit may be old dried out, mechanically injured, or affected by a rot at the center of the fruit.  If internal decay is present it often appears as mold or a discolored soft area at the stem or bottom.  Frit that has a slight greenish color is likely to have better keeping qualities. Good color is desired in mature fruit.
