Cut lemons in half and squeeze for juice, more juice can be extracted if lemons are rolled against a hard surface to break up the pulp first, slice thin for garnishing; grate the peel with a lemon grater; cut lemon rind with a sharp knife or kitchen scissors. If covered and stored in the refrigerator, lemons will keep for some time.
