Yucca History


There are two major varieties of yucca or cassava, bitter and sweet.  The sweet or aipi is safe to eat where as the bitter contains toxins.  However of the two, the bitter is more important to the commercial industry because the root grows much larger than the sweet.  Both kinds are identical and cooking makes the bitter safe to eat so if your in doubt as to what kind you have cook the root to be on the safe side.
