Cardoon   also called cardoni or cadi this celery plant look alike is related to the artichoke. It is a root vegetable that resembles a giant artichoke. A plant of the thistle family with edible stems and roots, Treat as artichokes. Leaves can be eaten raw or cooked like celery. The Cardoon is an Italian favorite that was highly prized during the height of the Roman empire. Grown in Northern California the Cardoon was brought to America by the Mediterranean's.

Season:  October through May

Yield:  2 lbs. =  1 1/2 lbs. cooked
            2 lbs. = 4 to 6 servings
