Stachy, Chinese Artichoke, Chorogi, Crosnes (Europe)     Stachys sieboldii

A tuber vegetable which belong to the Mint family, resembling the Jerusalem Artichoke hence the name but it is not related. Of far eastern origin. 

They are hard to peel, but can be eaten unpeeled. The simplest preparation is to boil them in salt water for about 15 minutes, and serve them with chopped fresh herbs and butter. Parboiling is essential. but they also can be eaten raw in salads, pickled, or boiled briefly, then fried
