Garlic also called the "stinking rose" is probably the most heavily used seasoning in the world. During the Roman times however it was not held in such great esteem.  Then the patricians gave it to their laborers to keep their strength: the wealthy citizens considered garlic too pungent for their own taste.  All of the world's great cuisines, from Chinese, to Italian, to French, make abundant use of this pungent flavoring. The world's finest garlic is American, grown and harvested in central California.

There are many claims of the medicinal value of garlic which science is just now trying to prove or disprove. Since early time, garlic has been credited with the power to drive away evil spirits and in some cultures it is used as a preventive cure for everything from the common cold to high blood pressure and was even recommended in times of plague.  Garlic is used in medicines in this country and has for sometime been known as  that compounds derived from garlic have a pronounced bactericidal effect which has been attributed to their reactivity for sufhydryl groups essential for the action of enzymes.  The Romans declared garlic to be a remedy for 61 ailments while Aristotle and Dioscorides, praised its medicinal qualities.  India believes garlic to be able to improve the voice, intellect, promotes healing of bone fractures and complexion.
