Button Mushrooms
A whitish brown to tan color with a thick
stalk. The meat changes color from white to slightly red. The
cap is 2 to 4 inches in diameter, curved with small scales and varies from
white to light brown.
The cultivated mushrooms are grown in dark places in
soil that has been enriched with manure. A constant temperature
between 57° and 64°F (15° to 18°C).
Although this mushroom was originally grown in
France, this is now grown successfully in many European countries as
well as the United States and the Far East.
Select smooth and unblemished caps that are closed
around the stem.
