Charbonnier Fall Season -
Wild, with gray-black cap with greenish tints and white gills. It is
umbrella-shaped, with cap sizes ranging from 2 to 3 inches. It is a
tender mushroom on the caps with flavor hints of pine, and the texture is
on the crunchy side. Requires some cleaning. Roast with olive oil, mix
with oyster for ragouts or cook with lamb or steak.
A weak mushroom, charbonnier is very
sensitive to temperature changes, not easy to keep over time.
