Truffle - Truffle du Périgord
Ranging from 1/2 to 3 inches wide, with a dark brown to black color these
mushrooms are covered with small warts or dimples. the are shaped
like a tuber and pitted with cavities. Found in France below the
surface of the soil under oak trees in deciduous woods. The flesh is
edible with a very strong aroma and flavor.
The truffles ripen between November to March.
The Périgord truffle is preferred over all truffles and is very expensive.

canned. When canned they are in whole, pieces or in the form of
peelings.
