Black Trumpet  Craterellus Cornucopioided Horn of Plenty, Black Chanterelles, Poor People's Truffle, Tropette des Morts and Corne d'Abondance (French), Totentrompete (German)

Charcoal-gray and horn shaped.  Also known as the Horn of Plenty and trompette des morts, it is a forest mushroom found in autumn.  Despite the German and French names, both of which mean "death trumpet," this is a culinary delight with a mild and pleasant taste.  The mushroom has an earthy flavor and is available fresh and dried.

Black trumpets are more delicate than the chanterelles that it is related to and is often used in fish and veal dishes.

Storage   Black Trumpets keep well for up to 14 days under refrigeration

Preparation  Nick named the poor mans truffle this mushroom goes well in many dishes that would use truffles.  Eggs, chicken, rice, sauces, veal, fish, pate and pasta are dishes as well as oriental preparation, and pickling.

The color remains after cooking.
