Boletus An
edible mushroom. Any of a large number of mushrooms having pores and not
gills on the underside of the cap. The famous French
cèpe, generally
available in this country as a dried mushroom, is a boletus. Many of
members of the boletus family are edible and choice, and grow wild in many
areas of the country. You can eat young boletus raw, thinly sliced, and
drizzled with olive oil, lemon juice and flakes of Parmesan Cheese. No
Bolete with red or orange pores and flesh that bruises blue should be
eaten.
