- Summer - This yellow-orange mushroom grows on trees
fanning out in layers from a tree log. in a fan shape. The average
mushroom is about 4 to 10 layers, 6 inches stretch per fan, and each layer
about
half inch thickness. It is a very dense with a firm texture and
chicken-like flavor suggest ragouts, soups, and fillings for poultry or
pasta.
Cook only the tender outer
edges of the caps; the rest is tough and woody. Slice and simmer in stock
for 45 minutes, then serve creamed on toast.
Goes well with spicy Mexican-style ingredients. As big as a hand.
