Spinach   
A leaf and bud vegetable. A leafy vegetable native to Asia. It is said that Spinach is both one of the most praised and abused vegetables but has become popular in recent years as a salad or component of a mixed salad.

Select  Clean, fresh, tender leaves of good green color. Wash, drain and remove sand and heavy stems and store in a plastic bag. Use as soon as possible. Available all year.

Serve Hot, as a vegetable with meat, poultry or fish, as a separate vegetable course, spinach puddings, or soufflés.

Cold, raw, as a salad green.

1 pound fresh spinach Serves 2 persons.

Spinach is also used to make very good soups.

Complimenting Condiments and Flavors  Eggs, ham and tongue, bacon drippings; sliced apple, garlic croutons, basil, mushrooms and sherry.
