Quality    Fresh, crisp, clean, good colored leaves with no seed stems.  The leaves should be tender and not wilted, crushed, or bruised.  There should be no decay.  The small heart leaves that have a yellowish green tinge because they were shaded by other leaves are usually the most tender and desirable.
Grades (for fresh)      Recognized grades are U.S. Extra No.1, U.S. No.1, and U.S. Commercial

U.S. Extra No.1  leaves of similar characteristics, fairly clean, well trimmed, free from coarse stalks, seed stems, seed buds, crowns, and roots, sand burs, and or other kinds of burs.  The leaves should also free of decay and from damage caused by clusters of leaves, wilting, discoloration, freezing, foreign material, disease, insects or from mechanical means.
