Chickory and Escarole    A leaf and bud vegetable.

Chicory and Escarole are understood to be in the lettuce family. Belgian endive is sometimes considered an open lettuce head, but is actually a small, cigar-shaped, tightly-leaved lettuce plant. A relative of chicory , Belgian endive is characterized by an elongated head (approximately 5 inches) consisting of white. compact leaves with creamy yellow tips. Flavor is mild and slightly bitter. French endive and escarole are salad plants not as frizzled at the edges as the chicory.Escarole Plant.jpg (67059 bytes)

Chicory can be distinguished by openness of head with bleached center leaves. The straight-leaved type is generally marketed as escarole.
