Collards A favorite in
the south for generations.
Prepare as kale. Frozen collards can be baked in
45 to 60 minutes.
Boiled with salt pork or hog jowls.
Shredded and fried with bacon or salt pork.
Varieties:
Prominent varieties are Georgia, Vates, Morris Heading, and Louisiana
Sweet.
Georgia Large, blue-green, crumpled leaves. Produces under
adverse conditions of heat and poor soil. Grown chiefly in the
South.
Vates over winter variety, holds color well in cold weather.
Compact, thick dark green leaves with short stems
Morris Heading wavy green, with short stems. The
head is moderately tight
Louisiana Sweet Larger leaf area and stem than Georgia, and
has thick, tender leaves.

similar in varietal characteristics which are fairly clean, well
trimmed, and of characteristic color for type and variety, which are
free from decay, and free from damage caused by coarse stalks, seed
stems, discoloration, freezing, disease, insects, or mechanical or
