Penne PEH-neh This
northern Italian pasta owes its fame to Neapolitan people . Penne consists
of short tubes cut on the diagonal with point-shaped ends, the better to
scoop sauces inside. The slender, thin, cut oblique at the end, reminds
one of the precious copper, solver and gold pen-nibs, of the ancient
feather ink pens. It's very versatile, and works well mixed with a sauce,
or in a casserole, soup, or pasta salad.
Penne rigate has ridges, the
better to hold sauces.
Penne lisce has smooth
walls.
