Asian noodles use wheat and rice flour but not the semolina variety used in Italy.

Japanese Soba noodles are made from buckwheat  and wheat flour. Soba noodles are served hot and cold with a dipping sauce.

Udon noodles are thick noodles made with wheat flour with similar uses to the Soba noodle but mostly served in broth with tempera nesting on top with chili paste.
