Fresh pasta is made by combining flour with eggs, salt and
sometimes a little olive oil or water. Once a dough is formed it is
kneaded about 5 to 7 minutes, until smooth and glossy and indents slightly
when pressed. This texture phase is important to producing a final product
with a silky smooth texture.
Once rolled the dough should rest at least an hour to aid
in the cutting down on the elasticity then cut into the noodles or shapes
needed.
Fresh pasta takes only a couple minutes to cook and must be
carefully watched to avoid over cooking.
