Sea bass are a migratory fish. They live much of the year close to shore or just off-shore and move to deep, warmer waters during the winter. These fish range in color from blue-gray to black. In America, the striped east coast sea bass is held in high regard. The common sea bass is popular in Europe. The Atlantic Coast variety is more lean than the Pacific coast variety. The flesh is white and well flavored. The range is from Massachusetts to Florida but most plentiful off the New Jersey Coast. Season Virginia Coast January to April
