Goatfish (Mullidae) Salmonete (Spain and Portugal), Triglia (Italy), Tekir (Turkey), Barbouni (Greece), Moano or Kuma (Hawaii), Himeji (Japan), Salmonet (South Africa) Found in Tropical and semitropical seas, there are 5 species in American waters of both the Atlantic and Pacific. The goatfish are most prevalent in Caribbean, Bahamas and in the Florida Keys. The Mediterranean goatfish is commonly and incorrectly called the "Red Mullet" or Rouget de Roche and is prized and used throughout the cuisines of Europe. Many goatfish are rose to red in color but the vary from yellow to white but when excited or killed will turn red. The meat of the goatfish is white with a delicate texture and few bones.
