Origin Malabar region of India This annual plant has berries that grow in clusters and are picked while still green. The two best types of black peppercorns are Indian Malabar with a slightly greenish hue and the expensive Tellicherry which is dark brown. Black pepper is much stronger and sharper than that of white pepper. Pepper is the worlds most popular spice. White pepper is the kernel of the black peppercorn with the outer cover removed before drying. Pink Peppercorns (Schinus-rerebinthifolius) Despite the name, the pink, peppery berries of this tree native to Brazil are not related to black, green or white pepper. They are commonly used in peppercorn blends, adding to the confusion. They may be slightly toxic, so don't use an excessive amount. Green Peppercorns have a fresher less pungent taste and are used in sauces, cheeses, pates and soups. They are usually packed in brine, air or freeze-dried. Available Whole, ground
