This spice that is the dried fleshy growth between the nutmeg shell and the outer husk, orange red in color, and has its own unique flavor that is more delicate than nutmeg.  The English use it in potted meats and cheeses, and the French enjoy it in pates and stuffing.  Mace is a great and subtle addition to cream sauces.
