popular and valuable food nuts, There are several varieties. The butternut
is a white walnut. The black walnut is also native to North America; the
flavor is much more pronounced than that of the English walnut, most often
seen in the market.
2 pounds of walnuts in shells will yield about 1 cup meat.
1/2 pound of walnut meat measures about 2 1/4 cups and will yield
approximately
2 3/4 cups chopped walnuts.
Preparation Break walnuts open with a
nutcracker. Remove meat from halves. For chopped nuts, use a chopper or
put meat through a nut grinder.
Market Forms Available in shells loose
and in bags; halved nut meats are canned and in envelopes; chopped are in
cans and envelopes; in syrup as a topping.
Serve As a nut for snacks or appetizers,
in baking, desserts, sauces, stuffing, confections, garnishes, in ice
creams and as a topping in syrup, as maple walnuts.
