Cashews
Anacardium occidentale
A Tropical South American nut; imported from Brazil and India. Used in
baking, cooking and for cashew butter. This is the only nut sold in the
United States out of its shell and this is mandated by law. The
cashew nut actually grows outside of the fruit called a
Maranon,
or Cashew Apple. The fruit has a sour taste and is sold in juice
form frozen, The nut hangs down from the bottom of the fruit like a comma.
The nutshell has a highly toxic oil that is extruded during the
roasting process. It is served extensively as a snack
and is usually available shelled or shelled and salted in envelopes and
cans or bottles.
