Black walnuts are only found in North America. They differ in size,
color and flavor from the English Walnut which we commonly use. The black
walnut received its name from the outer hull which, when the nut is ripe
turns to a sooty black and readily stains anything it contacts. The outer
shell of the nut is much darker, rounded in shape and considerably smaller
than the popular English walnut. The black walnut has a stronger flavor,
and is prized in baking and for ice cream. However, the black walnut is
much more valued for its wood than the nuts.
