Pepitas (peh-pee-tahs)Often
labeled as pumpkin seeds pepitas are usually the hulled seeds from several
varieties of large squash. Their low fat content makes them a
nutritional alternative thigh oil content nuts like the pine nuts
(pignoli) and pecans. Toasted or dried as they have been for
centuries the pepitas are great on salads and pastas to add a crisp or
crunch.
Pepitas are also used as thickeners and to flavor many
red and green moles.
