Hazelnuts, Filberts Corylus
A rich, sweet nut.Native to America. Filberts
are the European version of our hazelnuts. They are very similar in
flavor. Hazelnuts are available shelled in packages and toasted in
bottles. The thin brown skin is usually left on but it can be removed in
part by parching and then rubbing in a rough towel. They are used in
baking, ground in place of flour, used as a decoration or eaten as a
snack.
