There are 3 main forms of Chicory, one has large roots
which are dried as a coffee supplement for coffee, one that is used for
greens and one that is forced for compact clusters and known as Witloff.
Wiltoof 15 to 18 inches tall,
foliage smooth, long, medium dark green, inner leaves and heart are used
in salads, and in fall, roots can be reset and forced indoors resulting in
a second growth crown of compact leaves. The head and leaves is 4 to 5
inches long, tender, with a rich but mildly acrid flavor.
Large-Rooted Magdeburg
15 inches tall, medium green, with upright, dandelion-like foliage with
narrow leaves. The root is 12 to 15 inches in length, tapered,
white, young tender leaves can be used for greens.
Cicoria San Pasquale
broader leaves than Magdeburg, light green in color, used for greens
Cicoria Catalogna or Radichetta
dandelion like leaves useful for early greens, and flower shoots which
have a faint asparagus flavor.
