Endive


Endive,
 A leaf and bud vegetable.

Belgian endive leaves may open or turn green if the product is exposed to sunlight. Always store Belgian endive in a dark area.

Select  Fresh, clean, crisp and cold greens. Store only briefly in plastic bags in refrigerator. Varying availability.

Temperature/Humidity recommendation for short-term storage of  7 days or less humidity

Serve Hot, as a vegetable with meat. poultry or fish; or as a separate vegetable course.

Cold, raw, in salads. Cold stuffed Belgian endive is also used as an appetizer.

Servings and Weights
1 lb. as purchased = 3/4 lb. ready to serve raw
1 lb. as purchased = 8 1/2 half cup servings
12 lb. as purchased = 100 half cup servings
